Hi, my name is Elizabeth B. I am excited to help you take this big step in optimizing your life. The carnivore diet helped me in so many ways that it has become the primary therapy for my patients. I adapted to a full  Carnivore Diet from a meat-heavy Ketogenic Diet when I went into menopause. It helped me so much that I decided to write a book about it. It is called Good Fat is Good for Women: Menopause. Being a carnivore coach will give me the opportunity to spread the word about how much this diet improves not only your health but also your lifestyle. I have four years of experience in creating meal plans and practical advice to make the transition to a Carnivore diet uncomplicated and attainable.

I live and practice in Italy, where people think the Mediterranean diet with a lot of pasta guarantees them protection from chronic disease. Yet Italy has one of the highest rates of diabetes in Europe, so clearly it isn’t working. When people feel the benefits of how much their bodies change on the carnivore diet, what seems drastic and strange soon becomes a straightforward and easy. I use the Carnivore Diet to address many health conditions.

As a Naturopath, I used it to bring Crohn’s disease and Hashimoto’s Thyroiditis into remission, as well as to improve adrenal and thyroid dysfunctions.  As an osteopath, I use the Carnivore Diet to reduce joint pain and to restore cartilage. Often, after this restoration of cartilage, hip and knee replacements aren’t necessary. I always explain to my patients that if they try the Carnivore Diet for a month it will be easier to adjust structural misalignments when they return.

The Carnivore Diet is important for women’s health

Many women are suffering endocrine imbalances much younger. What I learned in researching my book made me understand how vital meat and animal fat are for women’s health.  Dietary animal fat is a crucial element for adolescent girls to reach adulthood without anxiety and depression. I have two daughters, so this subject is important to me. As a young woman, I experienced anorexia and bulimia. As a mother, I was conscious of protecting my two daughters from this. Unfortunately, they too had brushes with anorexia, bulimia, and also anxiety. I fully believe that had I known how to ensure my daughters and I were getting the right amount of animal nutrition, we would have been spared these self-destructive behaviors. I am happy to say that my three children are all carnivores now and that my son, who is a musician and who was suffering from arthritis in his fingers, now plays guitar without pain.

Cooking and Tradition

I was the executive chef of three Northern Italian restaurants in the United States. My parents are from Tennessee and Mississippi, so I love traditional Southern cooking. I like to make everything myself and think good food should be simple and accessible.

Sports Experience

I was a runner for many years but gave that up for martial arts in my 30s. I taught Kung Fu for fifteen years and had a school that competed and won in many tournaments. Had I been a carnivore then, I probably wouldn’t have had to live through long hours of pain waiting for aches and pains to heal after heavy sessions of sparring and training.  My husband is a veteran bicycle racer. He had one hip replaced and was assured the other hip would need to be replaced in six months. I insisted he go on a full Carnivore Diet. After a few months, he no longer needed the operation. It was amazing to see how the cartilage had grown back on his x-rays.

English is my native tongue, but I also speak Italian, French, German, and Chinese.

Vivo e pratico in Italia, dove si pensa che la dieta mediterranea con tanta pasta garantisca protezione dalle malattie croniche, nonostante l’Italia abbia uno dei tassi di diabete più alti d’Europa. Nella mia pratica uso la dieta carnivora per affrontare molte condizioni di salute.

Come naturopata, l’ho usata per portare in remissione il morbo di Crohn e la tiroidite di Hashimoto, nonché per migliorare le disfunzioni surrenali e tiroidee. Come osteopata, utilizzo la dieta carnivora per ridurre il dolore articolare e ripristinare la cartilagine, quindi non sono necessarie protesi di anca e ginocchio. Chiedo abitualmente ai miei pazienti di provare la dieta carnivora per un mese, così posso aggiustare più facilmente i disallineamenti strutturali quando tornano.

La Dieta Carnivora è Essenziale per la Salute della Donna

Molte donne soffrono di squilibri endocrini sempre molto più giovani. Quello che ho imparato durante la ricerca del mio libro mi ha fatto capire quanto siano vitali la carne e il grasso animale per la salute delle donne e quanto sia pericoloso se le nostre figlie diventassero vegetariane e vegane, due diete che le privano di sostanze nutritive. Il grasso animale nella dieta è un elemento cruciale per le ragazze adolescenti per raggiungere l’età adulta senza ansia e depressione.

Ho due figlie, quindi questo argomento è importante per me. Da giovane ho sperimentato anoressia e bulimia, ma non importa quanto fossi consapevole di proteggere le mie due figlie da questo, anche loro hanno avuto problemi con anoressia, bulimia e anche ansia. Credo pienamente che se avessi saputo come assicurarmi che io e le mie figlie stessimo ricevendo la giusta quantità di nutrizione animale, saremmo stati risparmiati da questi comportamenti autodistruttivi. Sono felice di dire che i miei tre figli ora sono tutti carnivori e che mio figlio, che è un musicista e che soffriva di artrite alle dita, ora suona la chitarra senza dolore.

La cucina e le tradizioni

Quando i miei figli erano piccoli ero l’executive chef di tre ristoranti negli Stati Uniti, quindi capisco anche quanto la preparazione dei pasti sia importante per chi ha una famiglia. Mentre cucinando i piatti carnivori  può semplificare la cottura, mi piace inventare nuove ricette carnivore, mantenendo la preparazione il più semplice possibile. Il cibo è la nostra medicina, quindi è importante sapere come dire quale cibo è meglio per noi, dove trovarlo e come cucinarlo. Anche il cibo è molto personale ed emotivo. A volte può sembrare che le nostre tradizioni culturali ci impediscano di essere il più sani possibile. È bello sapere come cambiare le ricette di famiglia per poterle ancora gustare con la nostra famiglia e continuare con la dieta.

Lo Sport

Ho fatto corsa a piedi per molti anni, ma ho rinunciato a questo per le arti marziali quando avevo 30 anni. Ho insegnato Kung Fu per quindici anni e vorrei essere stata carnivora durante quelle lunghe ore di dolore aspettando che i dolori e le sofferenze guarissero dopo pesanti sessioni di sparring e allenamento. Mio marito è un ciclista veterano. Ha subito la sostituzione dell’anca e è stato assicurato che avrebbe dovuto sostituituire anche l’altra, ma io ho insistito perché seguisse una dieta carnivora completa. Non ha più avuto bisogno dell’operazione. È stato sorprendente vedere come la cartilagine sia cresciuta sulle radiografie.

    I zoomed with Elizabeth, Monday, October 19th 2020 because I am contemplating going carnivore. I was debating whether I should go ahead and meet with her. My thoughts were, “how could a 30 min. session help me in any meaningful way?” I was wrong. I picked Elizabeth specifically because of her naturopath background, but also because she had a kind face. I had a list of questions. She listened well and understood the heart of each question. The focus is about your concerns and that you get them addressed. She’s a 4 or 5 year carnivore. She knows what she speaks of. My specific major issue is RA and she reassured me that the carnivore diet has helped many of her patients. She also has a book about hormones and menopause.
