Parmesan Crusted Fish and Shrimp w/Sautéed Garlic Kale

1 oz Mayo

3 tbs Butter

4 oz Tilapia [filets]

3 oz Shrimp

2 oz Parmesan Cheese

6 oz fresh kale


1/2 tsp Salt

1/2 tsp Pepper

1/2 tsp Garlic Powder

1 tsp minced garlic


Season fish and shrimp with the spices. Coat the fish with mayo and dip in the Parmesan cheese, covering both sides. Repeat with all filets. Coat all the shrimp with mayo and Parmesan cheese.

Heat a large skillet on medium. Add 1/2 tbs of butter and the shrimp, making sure to separate each piece. Cook for 5 minutes, then flip and cook for an additional 5 minutes.

In a second skillet on medium heat, add the other 1/2 tbs of butter and place in your fish. Cook fish for 5-7 minutes, then flip and cook additional 5-7 mins.

Soak kale leaves in a large bowl of water until dirt falls to the bottom. Remove kale from the bowl without drying. Chop kale into 1-inch pieces. Add kale, 2 tbs butter, and minced garlic to a skillet and cook on medium heat for 5-7 minutes.

Safely remove fish and shrimp from skillets, serve with the kale, and enjoy.
