Erin suffered from endometriosis, celiac disease and hyperglycaemia. She was a carbohydrate addict often only wanting to eat the bread at a restaurant instead of the meal she ordered.
In 2010 she had her son. He started to suffer from eczema due to food allergies her breast milk. Erin was told she could try to eliminate foods like wheat and soy, but that was often too restrictive for people and that she could just feed her son formula. Erin decided to eliminate the foods and also searched for answers to what she thought were unrelated symptoms in herself like chronic urinary tract infections.
She first found paleo and then the autoimmune protocol. She had improvements with both, but the symptoms never completely went away.
Erin learned of the carnivore diet and decided to slowly transition onto it. After four months of ditching the plants everything fell into place. Her symptoms cleared up.
