Crab Stuffed Fish w/Creamed Spinach

Serves: 1


1/4 cup Mayo

2 tbs Butter

1 filets Swai Fish [6 oz]

2.5 tbs Pork Rinds

1 lb Baby Spinach 

1/4 cup Heavy Cream

1/4 cup Parmesan cheese 


1 tsp Salt

1 tsp Pepper

1/2 tsp Chili Powder

1 tsp Garlic Powder


1/4 cup Mayo

1/2 cup Crushed Pork Rinds

3 oz Crab Meat


Stuffing: mix crab meat, 1/2 tsp salt, pepper, garlic powder, chili powder, 1/4 cup mayo, and 1/2 cup pork rinds.

Place half of the stuffing on the swai filet, smoothing out to cover the entire piece. Sprinkle 1 tbs of pork rinds on each filet. Roll the fish as tight as possible, without tearing. Lightly press down on the roll to seal it. Completely cover the filet in mayo and sprinkle 1.5 tbs of pork rinds on top. 

Add 1 tbs of butter to the skillet on medium heat. Place in your fish and cook for 5-7 minutes on each side. Reduce heat to low and cook for an additional 3-5 minutes on each side. 

In a skillet: add 1tbs butter, 1/2 tsp salt, pepper and garlic Powder. Add in the spinach and cook on medium heat for 3-4 minutes . Add in heavy cream and Parmesan cheese and mix well, cook another 3-4 minutes. Serve with fish… and enjoy.
