Salmon in Bacon Cream Sauce

Bacon Cream Sauce

Prep Time: 5 minutes 

Cook Temp: High/medium/low

Cook Time: 20 minutes 

Serves: 2

Ingredients:

6 slices of bacon

2 cups heavy whipping cream

4 oz Havarti cheese

3 TBS butter

2 Salmon filet

Spices:

1/2 tsp salt

1/2 tsp pepper

Instructions:

Start by seasoning your salmon with the salt and pepper on both sides. in a skillet on medium high heat, add your butter and salmon and cook for 4 minutes. flip and cook and additional 4 minutes. Remove salmon from pan and set aside. In a skillet on medium heat, cook bacon to desired level of crispness (3-5 minutes ). Remove bacon from skillet and set aside to cool.In the same skillet add in the heavy cream and cheese. Reduce the heat to low and let simmer until cheese has melted about 5 minutes, stirring occasionally.  Shred the bacon into small pieces. Add the bacon pieces back to the skillet and stir. Add the salmon in to the pan with the cream sauce and let simmer an additional 5 minutes. Remove from heat and enjoy.

Oysters Rockefeller

Oysters Rockefeller

Prep Time: 20 Minutes
Cook Temp: Medium/350F
Cook Time: 15 Minutes
Serves: 1-2

Ingredients:
6 [six] Fresh Oysters [shucked/cleaned]
1 stick Butter
1/2 cup Heavy Whipping Cream
1 [one] Egg
1/2 cup Parmesan Cheese
1 cup Pork Rinds [crushed]

Spices:
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1 tsp Parsley
1 tsp Basil

Shuck/clean the oysters and shells… save 6 of the shell halves with the deepest grooves. Mix the pork rinds and Parmesan cheese together in a shallow dish. Completely coat the oysters in the Parmesan-pork rind mixture…save the remaining mixture. In a skillet on medium heat: melt 6 tbs of butter. Place oysters in the skillet and cook for 1 minute on each side. Remove the oysters from skillet and set them to the side. In the same skillet: add the spices, heavy cream, and egg. Stir gently for 2-3 minutes until the mixture starts to thicken. Melt the reserved 2tbs of butter. Place one fried oyster in the bottom of each shell. Spoon 1-2 tbs of the egg-cream mixture on top of each oyster. Spoon 1 tbs of the Parmesan-pork rind mixture on top of each oyster, then drizzle the melted butter. Place the oysters on a cookie sheet and bake at 350F for 10 minutes. Safely remove from the oven and enjoy!

Shrimp Alfredo

Gravlax Stack

2 pieces of your favorite carnivore bread (I like chicken buns for this recipe)

2-4 ounces cream cheese

2-4 ounces gravlax (smoked salmon)

2 eggs, poached, soft boiled or fried

Salt

Black pepper, garnish

Paprika, garnish

Spread the cream cheese onto your 2 pieces of carnivore bread.

Place on a plate and layer the gravlax slices on top of the cream cheese.

Top gravlax with an egg on each stack.

Sprinkle with salt, pepper and paprika.

This pairs really well topped with hollandaise sauce.

Shrimp Meatballs


Prep Time: 15 Minutes
Cook Temp: Medium
Cook Time: 10-15 Minutes
Serves: 2

Ingredients:
1 [one] Egg
3 tbs Mayo
1/2 stick Butter
1 lb Shrimp
1/2 cup Pork Rinds
1 tbs Parmesan Cheese

Spices:
1/2 tsp Salt
1 tsp Chives
1 tsp Pepper
1 tsp Garlic Pepper
1 tsp Italian Seasoning


Instructions:

In a food processor: place shrimp and blend until it is a paste-like consistency.
In a bowl: transfer shrimp and blend in cheese, egg, pork rinds, mayo, and half of spices. Form your meatballs until firm.
In a skillet: add butter with the other half of spices and cook on medium heat until butter is melted. Add meatballs to skillet and let cook for about 3 minutes. Flip and cook for an additional 3 minutes. Continue to cook, while flipping the meatballs, for an additional 5 minutes. Safely remove from skillet… and enjoy.

Gator Po’ Boy

Prep Time: 20 Minutes

Cook Temp: Medium

Cook Time: 30 Minutes

Serves: 1

Ingredients:

     2 cups Lard

    3/4 cup Mayo

 7 [seven] Gator [filets]

        2 tbs Butter

1/4 batch CarniBatter

    2 slices Carnivore Bread

Spices:

1 tsp Tarragon

1 tsp Garlic Powder

1 tsp Cajun Seasoning

Sauce:

   4 tbs Mayo

   1 tsp Tarragon

1/2 tsp Dijon Mustard

   1 tsp Garlic Powder

1/2 tsp Anchovy Paste

   1 tsp Cajun Seasoning

Instructions:

Place both slices of carnivore bread on a cookie sheet and bake in the oven at 350F for 5 minutes. Combine butter and CarniBatter in a bowl, then blend. Take some CarniBatter in your hands and place 1 filet of gator in the center, then wrap/close/seal it. Repeat with all the gator filets. Heat lard on medium: add the gator filets and cook for about 7-10 minutes.

Po’ Boy Sauce: combine mayo, Dijon mustard, garlic powder, anchovy paste, Tarragon, and Cajun Seasoning. Mix well.

Spread the sauce and mayo on the Carnivore bread, add some gator… and enjoy.

Cream Cheese and Bacon Stuffed Salmon

Prep Time: 20 Minutes
Cook Temp: 350F
Cook Time: 30 Minutes
Serves: 2

Ingredients:
2 [two] Eggs [beaten]
3 slices Bacon [cooked]
2 [two] Salmon [skin-on filets]
4 oz Cream Cheese
3 oz Parmesan CheeseSpices:
1 tsp Salt
1 tsp Pepper
1 tsp Garlic Powder

Instructions:
In a food processor: grind 1 slice of bacon until finely ground.
Cream Cheese Mixture: crumble 2 slices of bacon into fairly small pieces and mix with half of the spices plus cream cheese.
Breading: mix the finely ground bacon with Parmesan cheese and the other half of spices.
Take the Salmon and slice it in half lengthwise, leaving only one edge attached. Open it up and stuff half of the cream cheese mixture inside each filet. Dip each filet of salmon in the eggs and then in the breading mixture. Place on a cookie sheet and bake in the oven at 350F for 30 minutes. Safely remove from the oven… and enjoy.
