Crustless Mini Meat Pies (with Hidden Liver)

These Crustless Mini Meat Pies with hidden liver are the perfect nutrient-dense addition to breakfast or lunch. Pack them in a lunchbox or keep in the fridge, they pair well with everything. It’s a great way to get your liver in without any unusual taste, texture, or appearance.

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 12 mini pies

Equipment

  • 12-cup muffin pan

Ingredients

  • 1 pound ground beef
  • ¼ pound beef liver ground
  • 4 eggs
  • 1 tablespoon tallow or other cooking fat
  • 1 teaspoon salt
  • 1 tablespoon herbs de Provence optional

Instructions

  • Preheat oven to 350°F / 175°C.
  • Combine meat and liver in a mixing bowl. Add in eggs, stir well to combine.
  • Melt the tallow or cooking fat and add to meat. Season with salt and optional herbs.
  • Grease a 12-cup muffin pan well or use cupcake liners. Spoon mixture into each well evenly.
  • Bake for 20 minutes, until done. Remove from oven and cool before removing. Serve warm or leftovers cold.

1/2 tsp Garlic Powder

Instructions:

Start by slicing your eggs lengthwise. Remove the yolks and place them in a bowl. Set the egg whites to the side. With a fork, smash your egg yolks. Add the mayo, cream cheese, and spices and mix well. Then, add the bacon and cheese and stir. Fill each of the egg whites with a spoon full of the mixture… and enjoy!

Bacon Cream Sauce

Ingredients:
6 slices Bacon
2 cups Heavy Whipping Cream
4 oz Havarti Cheese

Instructions:

In a skillet on medium heat: cook bacon to desired level of crispness (3-5 minutes). Safely remove bacon from skillet and set aside to cool. In the same skillet: combine heavy cream and cheese. Reduce the heat to low. Allow to simmer until cheese has melted (about 5 minutes), stirring occasionally. Shred the bacon into small pieces, add the bacon pieces back to the skillet, and stir. Safely remove from heat… and enjoy.

Bacon Cream Sauce

Cook Time: 20 minutes

Ingredients:

6 slices of bacon

2 cups heavy whipping cream

4 oz Havarti cheese

3 TBS butter

2 Salmon filet

Spices:

1/2 tsp salt

1/2 tsp pepper

Instructions:

Start by seasoning your salmon with the salt and pepper on both sides. in a skillet on medium high heat, add your butter and salmon and cook for 4 minutes. flip and cook and additional 4 minutes. Remove salmon from pan and set aside. In a skillet on medium heat, cook bacon to desired level of crispness (3-5 minutes ). Chicken Cordon Bleu

Chicken Cordon Bleu

Ingredients:

  2 [two] Chicken Breast [flattened]

3 [three] Eggs [beaten]

    2 cups Pork Rinds [crushed]

   4 slices Swiss Cheese

   4 slices Ham [thin]

 Place 2 slices of cheese and ham onto the flattened chicken. Starting at one end of the chicken, gently roll lengthwise into a tight roll. 

1-Dip your chicken roll in the egg mixture, making sure it’s completely coated;

2-Place in the pork rinds, coating completely;

3-Dip/coat, once again, in the egg mixture;

4-Then again, completely coat in pork rinds;

Place on a cookie sheet. Repeat with the second roll. Bake in the oven at 350F for 60 minutes. Safely remove… and enjoy.

1: in a saucepan: pour in broth and spices. Turn on high heat and bring to a boil.
2: in a bowl: add eggs and whisk.
3: once the broth has come to a boil, remove from heat.
4: using a fork: stir the broth in a circular motion and slowly drizzle in the beaten eggs.
