Stuffed Venison Backstrap

Stuffed Venison Backstrap

Prep Time: 10 Minutes

Cook Temp: 300F

Cook Time: 90 Minutes

Serves: 2-4

Ingredients:

1 Lb venison backstrap

1 Lb bacon

1/2 Lb venison sausage

Instructions:

Start by cutting 3 slices of bacon into small pieces and mix it into the sausage. Carefully slice your backstrap down the middle lengthwise, making sure not to cut all the way through. Open the backstrap up and lay flat on your cutting board. Cover the backstrap with a piece of parchment paper. Lightly pound it with a mallet, to slightly flatten it. Spread the sausage/bacon mix on top of the backstrap, completely covering it. Lay the remaining bacon out, making sure the sides are touching. Roll your backstrap over on itself, and place lengthwise at one end of the bacon. Tightly roll up the backstrap in the bacon. Place in a cast iron skillet. Bake in the oven at 300F for 90 minutes. Safely remove from the skillet… and enjoy.

Bacon-Wrapped Meatloaf

Bacon-wrapped Meatloaf with: 4 oz Calf Liver, 1 lb Beef, 1 lb Pork Sausage, 1 Egg, 1 cup Pork Rinds, and 10 slices Bacon. Bacon Cream Sauce

Bacon Cream Sauce

Prep Time: 5 Minutes
Cook Temp: Medium/Low
Cook Time: 10 Minutes

Ingredients:
6 slices Bacon
2 cups Heavy Whipping Cream
4 oz Havarti Cheese

Instructions:

In a skillet on medium heat: cook bacon to desired level of crispness (3-5 minutes). Safely remove bacon from skillet and set aside to cool. In the same skillet: combine heavy cream and cheese. Reduce the heat to low. Allow to simmer until cheese has melted (about 5 minutes), stirring occasionally. Shred the bacon into small pieces, add the bacon pieces back to the skillet, and stir. Safely remove from heat… and enjoy.

3 Meat Stew

Prep Time: 10 Minutes
Cook Temp: Medium/Low
Cook Time: 125 Minutes
Serves: N/A

Ingredients:
1lb Lamb Shoulder
1lb Stew Beef
1lb Stew Pork
6 cups Bone broth
6 tbs Butter

Spices:
1tsp Salt
1tsp Black Pepper
1tsp Garlic Powder
1tsp Italian seasoning
1/2 tsp Paprika

Instructions:

Start by cutting all the meat into small 1-inch pieces. Coat the meat with all of the spices. In a large skillet: add butter and meat on medium heat. Cook for 5 minutes, stirring occasionally. Transfer the contents of skillet to a large pot. Add in the bone broth. Turn on low heat, cover the pot, and allow to simmer for 2 hours. Safely remove from heat, serve… and enjoy.

Salmon in Bacon Cream Sauce

Bacon Cream Sauce

Prep Time: 5 minutes 

Cook Temp: High/medium/low

Cook Time: 20 minutes 

Serves: 2

Ingredients:

6 slices of bacon

2 cups heavy whipping cream

4 oz Havarti cheese

3 TBS butter

2 Salmon filet

Spices:

1/2 tsp salt

1/2 tsp pepper

Instructions:

Start by seasoning your salmon with the salt and pepper on both sides. in a skillet on medium high heat, add your butter and salmon and cook for 4 minutes. flip and cook and additional 4 minutes. Remove salmon from pan and set aside. In a skillet on medium heat, cook bacon to desired level of crispness (3-5 minutes ). Remove bacon from skillet and set aside to cool.In the same skillet add in the heavy cream and cheese. Reduce the heat to low and let simmer until cheese has melted about 5 minutes, stirring occasionally.  Shred the bacon into small pieces. Add the bacon pieces back to the skillet and stir. Add the salmon in to the pan with the cream sauce and let simmer an additional 5 minutes. Remove from heat and enjoy.

Swedish Meatballs

Swedish Meatballs

Prep Time: 15 Minutes
Cook Temp: Medium/Low
Cook Time: 45 Minutes
Serves: 2

Ingredients:
1 [one] Egg
1/2 stick Butter
1/2 cup Pork Rinds [crushed]
2 cups Beef Stock
1 cup Sour Cream
1/2 lb Ground Pork
1 1/2 cups Heavy Whipping Cream
1 lb Ground Chuck
1 batch CarniNoodlesSpices:
1/2 tsp Salt
1/4 tsp Pepper
1 tsp Garlic Powder
1 tsp Italian Seasoning


Instructions:
In a large bowl: combine ground chuck, ground pork, egg, pork rinds, and spices. Mix until well blended. After mixing, form the meatballs.
In a skillet: add the butter and meatballs. Cook on medium heat for about 3 minutes. Flip the meatballs and cook for another 3 minutes. Continue stirring and flipping the meatballs until completely cooked [about another 10 minutes]… then remove them from the skillet.
Drain the grease from the skillet: combine the stock, heavy cream, and sour cream… stir until completely mixed. Bring to a boil and allow to cook for 5 minutes, stirring constantly. Reduce heat to low and add the meatballs to the skillet… let simmer for 20 minutes. Safely remove from heat and spoon over the CarniNoodles. Enjoy!

Simple Pâté

4-8 servings

12-16 ounces liver (chicken is more mild)

8 ounces bacon (beef or pork)

1/2 cup tallow, plus more if using fat to seal 

1 1/2 tsp salt

1 tsp thyme

1 tsp garlic

2 whole eggs, whisked

Saute bacon on medium heat in a cast iron pan, a regular pan works, too.

After a few minutes of sauteing add liver and cook until still pink inside.

Melt tallow.

Blend in everything, except eggs, in a blender or with a hand mixer.

As you are blending everything, pour in the eggs. Do not stop blending or else the eggs will scramble. 

Blend until smooth.

Store in jars.

*Optional – seal top of jars with extra melted fat to prevent oxidation*

Let chill to firm up and to let the flavors meld together.

Eat cold, spread some on a burger or cheese crisps.

Or eat hot! Once firm and cooled down, you can also re-fry this to make a rendition of refried beans! 

Just scoop some into a hot greased pan, let sear, flip and sear again. You’d be amazed at how similar it tastes when you eat with taco meat!

Perfect Parmesan Pork Roast (Inspired by Victorian Recipe)

A very delicious and simple recipe. Refrigerates wonderfully, great for eating on for days.
 
You will need: 
1 4 lbs pork loin roast
3 ounces of lard
2 sticks of butter
1/2 cup shredded OR ground Parmesan cheese. I found ground to be easiest, shredded looks prettier and more rustic if your hosting.
serves: 4
 
Pre time: 10 min
cook time: 2 hours

Pre heat oven: 300

 
Prepare your pork loin roast by rinsing then patting dry, Rub the top and sides with lard, then dust with Parmesan. For a thick crust pat down and re-dust. 
Place both sticks of butter in pot and gently wedge the roast in between. Make sure the lid is on tight, then place in your oven. 
 
At the 1 hour mark add 1/3 cup of water

Cloud Cake Recipe (Inspired by 30s era diabetics recipe)

This is a very popular recipe with many variations. Ideal as a side or as a vessel for pate or marrow butter.
 
You will need:
24 egg whites 
12 oz farmers cheese
2 cups shredded raw cheddar
2 oz bacon drippings
 
Serves 12
Prep time 20 min
Cook time: 45 min
 
First lightly whisk egg whites in a large mixing bowl. Then fold in large slices of farmers cheese until completely blended. Pour in grated cheese and stir. 
 
Grease baking pan with your bacon drippings, then pour in batter. Place in oven and let bake until golden brown on top. The cake will rise quite a bit and then fall after baking and stabilize.
