Stuffed Venison Backstrap

Stuffed Venison Backstrap

Prep Time: 10 Minutes

Cook Temp: 300F

Cook Time: 90 Minutes

Serves: 2-4

Ingredients:

1 Lb venison backstrap

1 Lb bacon

1/2 Lb venison sausage

Instructions:

Start by cutting 3 slices of bacon into small pieces and mix it into the sausage. Carefully slice your backstrap down the middle lengthwise, making sure not to cut all the way through. Open the backstrap up and lay flat on your cutting board. Cover the backstrap with a piece of parchment paper. Lightly pound it with a mallet, to slightly flatten it. Spread the sausage/bacon mix on top of the backstrap, completely covering it. Lay the remaining bacon out, making sure the sides are touching. Roll your backstrap over on itself, and place lengthwise at one end of the bacon. Tightly roll up the backstrap in the bacon. Place in a cast iron skillet. Bake in the oven at 300F for 90 minutes. Safely remove from the skillet… and enjoy.

Ingredients:
1.5 lb Beef Short Ribs
4 tbs Fish Sauce

Spices:
1 tsp Ginger
1 tsp Garlic Powder

Instructions:

Mix all of the spices into the fish sauce. Generously spread the mixture on all sides of the ribs. Place the ribs on a cookie sheet and bake at 250F for 120 minutes. Safely remove from oven… and enjoy.

Bacon-Wrapped Meatloaf

Bacon-wrapped Meatloaf with: 4 oz Calf Liver, 1 lb Beef, 1 lb Pork Sausage, 1 Egg, 1 cup Pork Rinds, and 10 slices Bacon. Chicken Cordon Bleu

Chicken Cordon Bleu

Prep Time: 15 Minutes

Cook Temp: 350F

Cook Time: 60 Minutes

Serves: 2

Ingredients:

  2 [two] Chicken Breast [flattened]

3 [three] Eggs [beaten]

    2 cups Pork Rinds [crushed]

   4 slices Swiss Cheese

   4 slices Ham [thin]

 Place 2 slices of cheese and ham onto the flattened chicken. Starting at one end of the chicken, gently roll lengthwise into a tight roll. 

1-Dip your chicken roll in the egg mixture, making sure it’s completely coated;

2-Place in the pork rinds, coating completely;

3-Dip/coat, once again, in the egg mixture;

4-Then again, completely coat in pork rinds;

Place on a cookie sheet. Repeat with the second roll. Bake in the oven at 350F for 60 minutes. Safely remove… and enjoy.

Oysters Rockefeller

Oysters Rockefeller

Prep Time: 20 Minutes
Cook Temp: Medium/350F
Cook Time: 15 Minutes
Serves: 1-2

Ingredients:
6 [six] Fresh Oysters [shucked/cleaned]
1 stick Butter
1/2 cup Heavy Whipping Cream
1 [one] Egg
1/2 cup Parmesan Cheese
1 cup Pork Rinds [crushed]

Spices:
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1 tsp Parsley
1 tsp Basil

Shuck/clean the oysters and shells… save 6 of the shell halves with the deepest grooves. Mix the pork rinds and Parmesan cheese together in a shallow dish. Completely coat the oysters in the Parmesan-pork rind mixture…save the remaining mixture. In a skillet on medium heat: melt 6 tbs of butter. Place oysters in the skillet and cook for 1 minute on each side. Remove the oysters from skillet and set them to the side. In the same skillet: add the spices, heavy cream, and egg. Stir gently for 2-3 minutes until the mixture starts to thicken. Melt the reserved 2tbs of butter. Place one fried oyster in the bottom of each shell. Spoon 1-2 tbs of the egg-cream mixture on top of each oyster. Spoon 1 tbs of the Parmesan-pork rind mixture on top of each oyster, then drizzle the melted butter. Place the oysters on a cookie sheet and bake at 350F for 10 minutes. Safely remove from the oven and enjoy!

Simple Skillet Steak (inspired by Victorian recipe)

Incredibly easy. Quite possible the easiest and most delicious way to enjoy a hearty steak.
 
You will need:
1 steak of your choice (I used a delicious fatty top round)
1 stick of butter
1 cast iron skillet
 
Prep time: 5 min
Cook time: 10 min
Pre heat oven: 500 degrees (Place skillet in to heat with oven)
 
If you wish to rub your steak, do so before it goes in. Carefully with proper protection while the hot skillet is still on the oven wrack place the stick of butter in the skillet. It will begin to melt immediately. Place steak in the skillet carefully using tongs. Push wrack back in then close the oven for 2.5 minutes. Quickly flip the steak and then let cook for another 2.5 minutes. This should leave a thick cut medium rare. If cooking a thinner cut shave off a little time.

Turkey

Cook Time: 180 Minutes

Ingredients:

1/2 cup Mayo

  1 stick Butter

   10 lbs Turkey

Spices:

1 tsp Salt

2 tsp Basil

1 tsp Pepper

1 tsp Paprika

1 tsp Garlic Powder

Remove all gizzards from the turkey. Place the stick of butter in the cavity of the turkey. Mix all spices into your mayonnaise. Rub the mayonnaise mix over the entire turkey. Place turkey into a baking dish. Bake in the oven at 350F for 3 hours. Safely remove turkey from oven and serve. Enjoy!
