Oysters Rockefeller

Oysters Rockefeller

Prep Time: 20 Minutes
Cook Temp: Medium/350F
Cook Time: 15 Minutes
Serves: 1-2

Ingredients:
6 [six] Fresh Oysters [shucked/cleaned]
1 stick Butter
1/2 cup Heavy Whipping Cream
1 [one] Egg
1/2 cup Parmesan Cheese
1 cup Pork Rinds [crushed]

Spices:
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1 tsp Parsley
1 tsp Basil

Shuck/clean the oysters and shells… save 6 of the shell halves with the deepest grooves. Mix the pork rinds and Parmesan cheese together in a shallow dish. Completely coat the oysters in the Parmesan-pork rind mixture…save the remaining mixture. In a skillet on medium heat: melt 6 tbs of butter. Place oysters in the skillet and cook for 1 minute on each side. Remove the oysters from skillet and set them to the side. In the same skillet: add the spices, heavy cream, and egg. Stir gently for 2-3 minutes until the mixture starts to thicken. Melt the reserved 2tbs of butter. Place one fried oyster in the bottom of each shell. Spoon 1-2 tbs of the egg-cream mixture on top of each oyster. Spoon 1 tbs of the Parmesan-pork rind mixture on top of each oyster, then drizzle the melted butter. Place the oysters on a cookie sheet and bake at 350F for 10 minutes. Safely remove from the oven and enjoy!

Egyptian-style oxtail

Egyptian-style Oxtail

Prep Time: 5 minutes
Cook Temp: High/Low/Simmer
Cook Time: 2 hours 10 minutes
Serves:1

Ingredients:
1 stick Butter
3 cups Bone Broth
2 lb Oxtail
Spices:
1 tbs Salt
1 tsp Za’tar
1/2 tsp Cumin
1 tsp Parsley
1/2 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Smoked Paprika

Instructions:

Start by mixing all the spices together. Season the oxtails with 1/2 of the spice mixture.
In a skillet: add 1/2 stick butter and oxtails. Cook on high heat for about 4 minutes, rotating and flipping until they start to brown on all sides.
In a pot with a tight fitting lid: add the other 1/2 stick of butter, the other 1/2 of the spice mixture, and broth. Cook on high heat until it starts to boil. Once it comes to a boil, reduce the heat to low and add in the oxtails. Simmer for 2 hours. Safely remove from the pan… and enjoy!

Steak Bites

Steak Bites

Prep Time: 10 Minutes
Cook Temp: High
Cook Time: 5 Minutes
Serves: 2

Ingredients:
8 oz Steak
1/4 cup Parmesan Cheese
3 oz Pork Rinds
8 oz Cream Cheese
4 oz Cheddar Cheese
2 cups Lard

Spices:
1/2 tsp Salt
1/2 tsp Pepper

Instructions:

Cut steak into small pieces. Mix steak, cream cheese, cheddar cheese, Parmesan cheese, and spices. Once well-blended, form the mixture into 1-2 inch balls. Roll each ball in the pork rinds, completely covering them. Heat lard in a deep pan, submerging the rolled balls. Fry for about 5 minutes, until crispy. Safely remove the bites from the deep pan… and enjoy!

Ingredients:

1/2 cup Mayo

  1 stick Butter

   10 lbs Turkey

Spices:

1 tsp Salt

2 tsp Basil

1 tsp Pepper

1 tsp Paprika

1 tsp Garlic Powder

Remove all gizzards from the turkey. Place the stick of butter in the cavity of the turkey. Mix all spices into your mayonnaise. Rub the mayonnaise mix over the entire turkey. Place turkey into a baking dish. Bake in the oven at 350F for 3 hours. Safely remove turkey from oven and serve. Enjoy!

Goat Cheese Prosciutto Quiche

4 eggs

½ cup cream

4 ounce goat cheese

2 Tbs mayonnaise (optional)

2 Folio cheddar cheese shells or 4 ounces shredded cheese

3 ounces prosciutto

Pinch of salt


Preheat your oven to 350 degrees.

Layer your 2 cheese shells in the bottom of a 6” sillicon round pan.

Bake cheese for 10 minutes.

Let cool.

Thoroughly whisk eggs, cream, mayo and salt together.

Once cheese crust has cooled, spread half the goat cheese onto the crust, layer with prosciutto and then layer the goat cheese and prosciutto again.

Slowly pour your egg mixture over the layers. 

Place your silicone pan on a sheet pan and bake covered with foil for 30 minutes.

Remove foil and bake for about 10 more minutes or until center is just set.

Let cool 10 minutes before slicing.


You can easily double this recipe to use a larger baking pan like a pie pan. If doing so, check at 40 minutes instead of 30 minutes.

Creamy Cheese Soup

8 ounces cream cheese

4 ounces shredded cheddar

1 cup chicken broth

1 tsp garlic powder

¼ tsp salt or more to taste

¼ tsp black pepper


Combine cream cheese and broth in a pot and heat up to soften the cheese on low heat. This will take about 10 minutes.

After the cream cheese has softened with the broth, use an immersion blender to smooth the soup out. Or you can just pour into the blender and blend for 1 minute.

Add soup back to the pot on low heat. Stir in seasonings and slowly stir in the shredded cheese.

Continue to cook on low while stirring until cheese is melted.

If the soup is too thick for you, you can add more broth.


This soup is great on it’s own or add your own toppings or mix ins! Good ideas are bacon bits, cheese chips or diced chicken!

Rotten Eggs

12 boiled eggs

4 ounces full fat yogurt or sour cream

2 tsp mustard

1 tsp garlic

½ tsp salt

1 tsp hot sauce

1-2 Tbs chlorella (for color)

1 Tbs activated charcoal


Cut boiled eggs in half and place the yolks in a bowl. Mash the yolks with yogurt or sour cream, mustard, garlic, salt and hot sauce.

Divide the yolk mixture into 2 bowls.

Color one half with chlorella and the other half with charcoal.

Use a zip bag to pipe in filling into the eggs.
