Equipment

  • 12-cup muffin pan

Ingredients

  • 1 pound ground beef
  • ¼ pound beef liver ground
  • 4 eggs
  • 1 tablespoon tallow or other cooking fat
  • 1 teaspoon salt
  • 1 tablespoon herbs de Provence optional

Instructions

  • Preheat oven to 350°F / 175°C.
  • Combine meat and liver in a mixing bowl. Add in eggs, stir well to combine.
  • Melt the tallow or cooking fat and add to meat. Season with salt and optional herbs.
  • Grease a 12-cup muffin pan well or use cupcake liners. Spoon mixture into each well evenly.
  • Bake for 20 minutes, until done. Remove from oven and cool before removing. Serve warm or leftovers cold.

Easy Boiled Beef Kidney

You’ll be mind blown by how good this easy beef kidney recipe for keto and carnivore diets is! If you want to eat more nose to tail, this 3-step stovetop dish is a great way to normalize the presence of nutrient-dense organ meats in your home.

Prep Time: 6 minutes
Cook Time: 8 minutes
Total Time: 14 minutes
Servings: 4

Equipment

  • small pot with lid

Ingredients

  • 1 beef kidney
  • salt to taste, optional
  • butter best cold, optional

Instructions

  • Fill a small pot with enough water to submerge the kidney.
  • Cover and bring water to a boil over medium-high heat.
  • Reduce the heat, add kidney and leave the lid cracked to allow heat to escape.
  • Boil for 8 minutes, monitor the heat so water does not boil over.
  • Remove from heat. Drain water and quickly rinse kidney under cool water if desired.
  • To serve, simply cut into half, medallions or bite-sized pieces. Sprinkle with optional salt to taste and eat with cold butter ad libitum.

Notes

The fat is excellent and should be left on.

Cooking time may vary due to the size of kidney. I cook the average beef kidney for 8 minutes, extra-large ones may go for as long as 10 minutes. Lamb, sheep, and goat kidneys are smaller, typically I only boil them for 4 to 5 minutes or so.

You want the kidney to boil for the full cooking time. Regulate temperature by adjusting the flame and setting the lid more or less cracked (open) to find the sweet spot of boiling but not boiling over.

Ingredients:

     2 cups Lard

    3/4 cup Mayo

 7 [seven] Gator [filets]

        2 tbs Butter

1/4 batch CarniBatter

    2 slices Carnivore Bread

Spices:

1 tsp Tarragon

1 tsp Garlic Powder

1 tsp Cajun Seasoning

Sauce:

   4 tbs Mayo

   1 tsp Tarragon

1/2 tsp Dijon Mustard

   1 tsp Garlic Powder

1/2 tsp Anchovy Paste

   1 tsp Cajun Seasoning

Instructions:

Place both slices of carnivore bread on a cookie sheet and bake in the oven at 350F for 5 minutes. Combine butter and CarniBatter in a bowl, then blend. Take some CarniBatter in your hands and place 1 filet of gator in the center, then wrap/close/seal it. Repeat with all the gator filets. Heat lard on medium: add the gator filets and cook for about 7-10 minutes.

Po’ Boy Sauce: combine mayo, Dijon mustard, garlic powder, anchovy paste, Tarragon, and Cajun Seasoning. Mix well.

Spread the sauce and mayo on the Carnivore bread, add some gator… and enjoy.

Bacon and Brie Stuffed Bison Burgers

Prep Time: 15 Minutes

Ingredients:
3 oz Brie
16-20 slices Bacon
1 lb Ground Bison

Spices:
1 tsp Garlic Powder
1 tsp Pink Himalayan Salt

Instructions:

Mix spices into the bison. Form into a tight ball, then flatten on a plate. Wrap the Brie in 3 slices of bacon. Fold up the edges of the ground meat to completely seal the burger. Lay 4 slices of bacon down with sides touching, place the burger in the middle, and wrap the bacon around to completely seal it. Repeat with more bacon in the opposite direction. Place in a skillet on medium, cover, and cook for 10 minutes. Flip, and repeat on the second side. Remove cover and cook an additional 3 minutes on each side. Safely remove from skillet… and Enjoy.
