Equipment

  • Crockpot

Ingredients

  • 2 pounds beef marrow bones
  • 2 pounds stew meat cubed
  • 2 tbsp tallow or other cooking oil
  • 6 cups bone broth
  • 8 ounce mushrooms quartered
  • 2 cups cauliflower chopped
  • 1 large carrot chopped
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 tsp dried thyme
  • 2 tsp salt
  • 1 tsp ground black pepper

Instructions

  • Heat the crockpot on low. Place marrow bones in the center of the bowl.
  • In a large skillet, over medium heat, brown the beef in tallow by searing all sides quickly. Transfer to the crockpot.
  • Add all remaining ingredients (broth, mushrooms, carrot, onion, garlic, thyme, salt, and pepper) to the crockpot.
  • Cover and cook on low for 6-8 hours. Serve hot.

3-Ingredient Carnivore Scotch Eggs (No Pork)

Crispy, greasy Carnivore Scotch Eggs are loaded with protein and make a great appetizer or main portion of the meal. The best part is that this pork-free version has only 3-ingredients!

Serve hot, pack into a picnic, or store in the fridge to use throughout the week.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Servings: 12 Scotch eggs

Ingredients

  • 2 pounds ground beef or chicken sausage
  • 2 teaspoons salt
  • 12 large boiled eggs

Instructions

  • Preheat the oven to 350°F (175°C).
  • Line two small rimmed baking sheets with parchment paper.
  • Combine beef (or chicken) and salt in a large bowl. Use your hands to mix the ingredients together and form into 12 meatballs. Place 6 meatballs on each of the lined baking sheets and press flat.
  • Place one boiled egg in the middle of each circle of meat and wrap the meat around the egg, leaving no gaps or holes.
  • Bake about 15 minutes, turn them over, and continue for another 10 minutes, until outside is golden brown. Place under the broiler to finish for 5 minutes for a crispy shell. Serve hot.

  • 12-cup muffin pan

Ingredients

  • 1 pound ground beef
  • ¼ pound beef liver ground
  • 4 eggs
  • 1 tablespoon tallow or other cooking fat
  • 1 teaspoon salt
  • 1 tablespoon herbs de Provence optional

Instructions

  • Preheat oven to 350°F / 175°C.
  • Combine meat and liver in a mixing bowl. Add in eggs, stir well to combine.
  • Melt the tallow or cooking fat and add to meat. Season with salt and optional herbs.
  • Grease a 12-cup muffin pan well or use cupcake liners. Spoon mixture into each well evenly.
  • Bake for 20 minutes, until done. Remove from oven and cool before removing. Serve warm or leftovers cold.

Easy Boiled Beef Kidney

You’ll be mind blown by how good this easy beef kidney recipe for keto and carnivore diets is! If you want to eat more nose to tail, this 3-step stovetop dish is a great way to normalize the presence of nutrient-dense organ meats in your home.

Prep Time: 6 minutes
Cook Time: 8 minutes
Total Time: 14 minutes
Servings: 4

Equipment

  • small pot with lid

Ingredients

  • 1 beef kidney
  • salt to taste, optional
  • butter best cold, optional

Instructions

  • Fill a small pot with enough water to submerge the kidney.
  • Cover and bring water to a boil over medium-high heat.
  • Reduce the heat, add kidney and leave the lid cracked to allow heat to escape.
  • Boil for 8 minutes, monitor the heat so water does not boil over.
  • Remove from heat. Drain water and quickly rinse kidney under cool water if desired.
  • To serve, simply cut into half, medallions or bite-sized pieces. Sprinkle with optional salt to taste and eat with cold butter ad libitum.

Notes

The fat is excellent and should be left on.

Cooking time may vary due to the size of kidney. I cook the average beef kidney for 8 minutes, extra-large ones may go for as long as 10 minutes. Lamb, sheep, and goat kidneys are smaller, typically I only boil them for 4 to 5 minutes or so.

You want the kidney to boil for the full cooking time. Regulate temperature by adjusting the flame and setting the lid more or less cracked (open) to find the sweet spot of boiling but not boiling over.

Stuffed Venison Backstrap

Prep Time: 10 Minutes

Cook Time: 90 Minutes

Serves: 2-4

Ingredients:

1 Lb venison backstrap

1 Lb bacon

1/2 Lb venison sausage

Instructions:

Start by cutting 3 slices of bacon into small pieces and mix it into the sausage. Carefully slice your backstrap down the middle lengthwise, making sure not to cut all the way through. Open the backstrap up and lay flat on your cutting board. Cover the backstrap with a piece of parchment paper. Lightly pound it with a mallet, to slightly flatten it. Spread the sausage/bacon mix on top of the backstrap, completely covering it. Lay the remaining bacon out, making sure the sides are touching. Roll your backstrap over on itself, and place lengthwise at one end of the bacon. Tightly roll up the backstrap in the bacon. Place in a cast iron skillet. Bake in the oven at 300F for 90 minutes. Safely remove from the skillet… and enjoy.

6 slices Bacon
2 cups Heavy Whipping Cream

Instructions:

In a skillet on medium heat: cook bacon to desired level of crispness (3-5 minutes). Safely remove bacon from skillet and set aside to cool. In the same skillet: combine heavy cream and cheese. Reduce the heat to low. Allow to simmer until cheese has melted (about 5 minutes), stirring occasionally. Shred the bacon into small pieces, add the bacon pieces back to the skillet, and stir.
