Keto Butter Pecan Ice Cream

No cook rich and buttery caramel flavored ice cream with roasted pecan pieces. Butter pecan is a long time Texas favorite.

Ingredients:

For Pecans:
  • 1 cup Chopped pecans
  • 3 Tbsp Butter
  • 1 tsp Sukrin Gold or Swerve
  • 1/8 tsp Sea salt
For Ice Cream Base:
  • 1 cup Heavy whipping cream
  • 1/3 cup Swerve
  • 1/4 cup Sukrin Gold or increase Swerve by 1/4 cup
  • 1 tsp Vanilla extract
  • 1 tsp Maple extract
  • 1 tsp Caramel extract
  • 1 Tbsp Butter pecan extract or increase caramel & vanilla to 2 tsp each https://amzn.to/2w8Var6
  • 1 cup Unsweet coconut milk or almond milk
  • 1 Tbsp Rum

Instructions:

For Pecans:
  1. Preheat oven to 350F.
  2. Add butter to medium bowl and melt it in microwave.
  3. Add pecans and coat them well.
  4. Lightly spritz foil lined baking sheet with cooking spray or use non-stick foil.
  5. Spread pecans on baking sheet and sprinkle with the sweetener and salt.
  6. Put baking sheet in oven and toast them just until they become fragrant, 5-8 min.
  7. Remove from oven and allow to cool.
For Ice Cream Base:
  1. Pour heavy whipping cream into medium chilled bowl and whip on high speed until stiff peaks form.
  2. Add sweeteners and extracts and mix well.
  3. Add coconut milk a little at a time until well incorporated.
  4. Stir in rum.
  5. Pour mixture in ice cream maker.
  6. When ice cream is almost ready, add in the pecans.
  7. Once done, scoop ice cream into shallow container and freeze until it’s the preferred consistency

Easy Cheeseburger Pie

This easy cheeseburger pie is perfect for a low-stress dinner any day of the week! Flavored with simple everyday ingredients, it is sure to be a new family favorite. Plus, you probably already have these budget-friendly ingredients on hand in your fridge right now.

Ingredients

  • 4 whole eggs
  • 1 tablespoon dulse flakes optional
  • 1/2 tablespoon salt
  • 1.5 pound ground beef
  • 1/2 tablespoon tallow or butter
  • 1 large onion diced
  • 1 cup cheese grated

Instructions

  • Preheat the oven to 350*F (176*C)
  • Grease pie plate.
  • Lightly brown the meat in tallow or butter in a heavy-bottomed skillet or cast iron, transfer to pie plate once done.
  • In the same skillet, add a little more fat and brown the onions until translucent, about 5-7 minutes.
  • While the onions cook, whisk the eggs. Add optional dulse and salt.
  • Cover the meat with eggs. Press down or gently shift the meat around a little to allow the eggs to sink down into the meat. Sprinkle the onions over the eggs and meat. Top the whole pie with shredded cheese.
  • Bake for 20 minutes, until cheese is melted and bubbly.

Notes

To make more of a complete cheeseburger themed meal, serve with a side of pickles or Pickle Relish and thick slices of farmer’s market fresh tomatoes on the side when you serve.

Ingredients

  • 1 tablespoon grass-fed butter
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1/2 pound shiitake mushrooms or other culinary choice
  • 1 pound chicken sausage
  • 10 whole eggs
  • 1/2 cup shredded raw milk cheese
  • 1/4 cup Parmesan grated
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat the oven to 350 degrees F.
  • Warm the butter in a frying pan over medium heat. Saute the onion and garlic for 5 minutes.
  • Add the mushrooms to the pan, continue cooking for 5 more minutes. Push mushroom onion mixture over to the side of the pan and squeeze the sausage from its casing into the same pan. Break sausage into smaller pieces with a spatula and brown evenly, 5 to 10 minutes over medium-low heat. Then mix in with the onions.
  • While the sausage cook, whisk 10 eggs in a bowl. Add in cheese.
  • Transfer meat to am 8×8-inch baking dish. Spread out evenly. Pour the eggs over the meat. Prick the meat a few times with a fork so the egg can settle in.
  • Bake for 20 minutes, until eggs are set and top is golden brown. Serve warm.

Low-Carb Keto Breakfast Lasagna

Ingredients

  • 9 whole eggs
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 pound chicken sausage
  • 1/2 cup heavy cream
  • 1/2 cup bone broth
  • 1 medium zucchini (3/4 of a pound)
  • 2 cups mozzarella cheese shredded

Instructions

  • Preheat the oven to 350 degrees F.
  • Whisk the eggs with salt and pepper. Warm a bit of butter in a skillet and scramble the eggs. Remove from heat and set aside.
  • In the same skillet, brown the sausage. Once it is cooked, add the cream and broth to the pan. Simmer together with the sausage for 5 to 10 minutes, until the liquid reduces a bit.
  • Spiralize or julienne the zucchini, go for long, broad pieces.
  • In an 8 by 8-inch baking dish, spoon a layer of sausage and liquid to the bottom of the dish. Arrange half the slices of zucchini across in one direction. Divide the scrambled eggs in half and spread over the first layer of zucchini. Top this layer with 1 cup shredded cheese.
  • Repeat the layers again. Sausage with creamy broth, zucchini, egg, and cheese. Press down on the layers to flatten. My dish was almost overflowing but the volume greatly reduces as the lasagna bakes.
  • Bake for 40 minutes until the cheese is golden and bubbly. Slice and serve warm. Save leftovers in the fridge. Serve cold for lunch.

Instructions:

In a skillet on medium heat: cook bacon to desired level of crispness (3-5 minutes). Safely remove bacon from skillet and set aside to cool. In the same skillet: combine heavy cream and cheese. Reduce the heat to low. Allow to simmer until cheese has melted (about 5 minutes), stirring occasionally. Shred the bacon into small pieces, add the bacon pieces back to the skillet, and stir. Safely remove from heat… and enjoy.

Ingredients:

6 slices of bacon

2 cups heavy whipping cream

4 oz Havarti cheese

3 TBS butter

2 Salmon filet

Spices:

1/2 tsp salt

1/2 tsp pepper

Instructions:

Start by seasoning your salmon with the salt and pepper on both sides. in a skillet on medium high heat, add your butter and salmon and cook for 4 minutes. flip and cook and additional 4 minutes. Remove salmon from pan and set aside. In a skillet on medium heat, cook bacon to desired level of crispness (3-5 minutes ). Remove bacon from skillet and set aside to cool.In the same skillet add in the heavy cream and cheese. Reduce the heat to low and let simmer until cheese has melted about 5 minutes, stirring occasionally.  Shred the bacon into small pieces. Add the bacon pieces back to the skillet and stir. Add the salmon in to the pan with the cream sauce and let simmer an additional 5 minutes. Remove from heat and enjoy.

Ingredients:

  2 [two] Chicken Breast [flattened]

3 [three] Eggs [beaten]

    2 cups Pork Rinds [crushed]

   4 slices Swiss Cheese

   4 slices Ham [thin]

 Place 2 slices of cheese and ham onto the flattened chicken. Starting at one end of the chicken, gently roll lengthwise into a tight roll. 

1-Dip your chicken roll in the egg mixture, making sure it’s completely coated;

2-Place in the pork rinds, coating completely;

3-Dip/coat, once again, in the egg mixture;

4-Then again, completely coat in pork rinds;

Place on a cookie sheet. Repeat with the second roll. Bake in the oven at 350F for 60 minutes. Safely remove… and enjoy.

Oysters Rockefeller

Oysters Rockefeller

Prep Time: 20 Minutes
Cook Temp: Medium/350F
Cook Time: 15 Minutes
Serves: 1-2

Ingredients:
6 [six] Fresh Oysters [shucked/cleaned]
1 stick Butter
1/2 cup Heavy Whipping Cream
1 [one] Egg
1/2 cup Parmesan Cheese
1 cup Pork Rinds [crushed]

Spices:
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1 tsp Parsley
1 tsp Basil

Shuck/clean the oysters and shells… save 6 of the shell halves with the deepest grooves. Mix the pork rinds and Parmesan cheese together in a shallow dish. Completely coat the oysters in the Parmesan-pork rind mixture…save the remaining mixture. In a skillet on medium heat: melt 6 tbs of butter. Place oysters in the skillet and cook for 1 minute on each side. Remove the oysters from skillet and set them to the side. In the same skillet: add the spices, heavy cream, and egg. Stir gently for 2-3 minutes until the mixture starts to thicken. Melt the reserved 2tbs of butter. Place one fried oyster in the bottom of each shell. Spoon 1-2 tbs of the egg-cream mixture on top of each oyster. Spoon 1 tbs of the Parmesan-pork rind mixture on top of each oyster, then drizzle the melted butter. Place the oysters on a cookie sheet and bake at 350F for 10 minutes. Safely remove from the oven and enjoy!
