Parmesan-crusted Lamb Chops

Parmesan-crusted Lamb Chops

Prep Time: 5 Minutes
Cook Temp: Medium
Cook Time: 10 Minutes
Serves: 2

Ingredients:
1 lb Lamb Chops
1 cup Parmesan Cheese [grated]
1 stick Butter
1/4 cup Mayo
Spices:
1 tsp Garlic Powder
1 tsp Basil
1/4 tsp Salt
1/4 tsp Pepper

Instructions:
Start by mixing all the spices into the Parmesan cheese. Next, coat each lamb chop with mayo and dip [coat well] in the Parmesan cheese. Add the butter to a skillet and turn on medium heat. Once butter starts to melt, add the lamb chops to the skillet and cook for 5 minutes. Flip and cook an additional 5 minutes. Safely remove from skillet and enjoy!

Chicken Cordon Bleu

Chicken Cordon Bleu

Prep Time: 15 Minutes

Cook Temp: 350F

Cook Time: 60 Minutes

Serves: 2

Ingredients:

  2 [two] Chicken Breast [flattened]

3 [three] Eggs [beaten]

    2 cups Pork Rinds [crushed]

   4 slices Swiss Cheese

   4 slices Ham [thin]

 Place 2 slices of cheese and ham onto the flattened chicken. Starting at one end of the chicken, gently roll lengthwise into a tight roll. 

1-Dip your chicken roll in the egg mixture, making sure it’s completely coated;

2-Place in the pork rinds, coating completely;

3-Dip/coat, once again, in the egg mixture;

4-Then again, completely coat in pork rinds;

Place on a cookie sheet. Repeat with the second roll. Bake in the oven at 350F for 60 minutes. Safely remove… and enjoy.

Oysters Rockefeller

Oysters Rockefeller

Prep Time: 20 Minutes
Cook Temp: Medium/350F
Cook Time: 15 Minutes
Serves: 1-2

Ingredients:
6 [six] Fresh Oysters [shucked/cleaned]
1 stick Butter
1/2 cup Heavy Whipping Cream
1 [one] Egg
1/2 cup Parmesan Cheese
1 cup Pork Rinds [crushed]

Spices:
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1 tsp Parsley
1 tsp Basil

Shuck/clean the oysters and shells… save 6 of the shell halves with the deepest grooves. Mix the pork rinds and Parmesan cheese together in a shallow dish. Completely coat the oysters in the Parmesan-pork rind mixture…save the remaining mixture. In a skillet on medium heat: melt 6 tbs of butter. Place oysters in the skillet and cook for 1 minute on each side. Remove the oysters from skillet and set them to the side. In the same skillet: add the spices, heavy cream, and egg. Stir gently for 2-3 minutes until the mixture starts to thicken. Melt the reserved 2tbs of butter. Place one fried oyster in the bottom of each shell. Spoon 1-2 tbs of the egg-cream mixture on top of each oyster. Spoon 1 tbs of the Parmesan-pork rind mixture on top of each oyster, then drizzle the melted butter. Place the oysters on a cookie sheet and bake at 350F for 10 minutes. Safely remove from the oven and enjoy!

Steak Bites

Steak Bites

Prep Time: 10 Minutes
Cook Temp: High
Cook Time: 5 Minutes
Serves: 2

Ingredients:
8 oz Steak
1/4 cup Parmesan Cheese
3 oz Pork Rinds
8 oz Cream Cheese
4 oz Cheddar Cheese
2 cups Lard

Spices:
1/2 tsp Salt
1/2 tsp Pepper

Instructions:

Cut steak into small pieces. Mix steak, cream cheese, cheddar cheese, Parmesan cheese, and spices. Once well-blended, form the mixture into 1-2 inch balls. Roll each ball in the pork rinds, completely covering them. Heat lard in a deep pan, submerging the rolled balls. Fry for about 5 minutes, until crispy. Safely remove the bites from the deep pan… and enjoy!

Chicken Skin Chips

Chicken skin from 1-2 whole chickens or 1 pound chicken skins from your butcher, if you’re lucky like that

Salt or your favorite seasoning blend

Preheat oven to 325 degrees.

Season chicken skins with your seasoning of choice.

Place skins on a parchment lined sheet pan. They can be touching because they will shrink a lot during the cooking process. 

Bake for 20-22 mins. Flip skins over and bake another 20-22 mins. 

Let cool before eating.

If you want really flat chips, lay another parchment sheet over the skins and then lay another sheet pan on top of that parchment paper. Cooking times will vary for this method, so I suggest checking them 5 minutes sooner.

 Chicken Fried Steak

Prep Time: 10 Minutes

Serves: 2

Ingredients:
5 oz Lard
4 [four] Eggs beaten
2 cups crushed Pork Rinds
2 [two] Cubed Steaks [6oz each]
1 cup Parmesan Cheese

Spices:
½ tsp Salt
½ tsp Pepper
½ tsp Garlic Powder

Gravy:
1 tbs Pork Fat
1 cup Heavy Whipping Cream
1 tsp Buttermilk Powder

Spices:
1 tsp Salt
1 tsp Pepper

Instructions:

Start by seasoning your steaks with ½ tsp salt, ½ tsp pepper, and ½ tsp garlic powder on both sides. Dip each steak into the eggs, into the Parmesan cheese, then into the eggs again, and finally coat in the pork rinds. Repeat with second steak. Heat the lard on medium. Once hot, carefully add your steaks into the pan. After about 7 minutes, flip your steaks and let them cook for another 7 minutes on the other side. Safely remove from the pan.
In a separate sauce-pan: add the pork fat, buttermilk powder,½ tsp salt, ½ tsp pepper, ½ tsp garlic powder, and heavy cream, then stir. Allow to cook on medium for 5-10 minutes until thickened.
Top steak with your gravy… and enjoy!

Scotch Eggs

Scotch Eggs

Prep Time: 20 Minutes
Cook Temp: Medium/High
Cook Time: 15 Minutes
Serves: 2

Ingredients:
2 cups Lard
1 link Chorizo
2 oz Pork Sausage
3 oz Pork Rinds
2 [two] Raw Eggs
2 [two] Eggs [beaten]
Spices:
1 tsp Salt
1 tsp Pepper
1 tsp Garlic Powder
1 tsp Cayenne Pepper

Instructions:
Boil 2 raw eggs for 1 minute on high. Safely remove from heat and allow them to continue cooking for an additional 3 minutes in the water [this will give you 2 soft-boiled eggs]. Place the soft-boiled eggs in a bowl of ice water and allow them to soak for at least 5 minutes. Remove soft-boiled eggs from ice and carefully peel both eggs.
Combine the sausage and chorizo together, add the spices, and mix well. Divide the sausage mixture into two even parts. Take 1/2 [one even part] of the mixture and flatten with your hand. Place 1 soft-boiled egg in the middle of the mixture. Carefully enclose the egg completely with the sausage and set aside. Then, do the same thing with the second egg and sausage mixture. Roll each completed sausage-enclosed egg in beaten eggs, and then in the ground pork rinds.

Heat up the lard in a deep pan, making sure the lard is deep enough to cover both completed sausage-wrapped eggs. Fry them for 5-7 minutes, until golden brown.
Safely remove from the pan, and allow to cool completely.
