Keto Chicken Liver Pate

This easy keto chicken liver pate recipe with no alcohol is ultra-smooth and creamy. Every bite is packed with flavor and great nutrition! Make this as an appetizer when you really want to wow your guests!

Serves: 6

Ingredients

  • ½ pound chicken livers
  • ½ cup butter or duck fat for dairy free
  • 1 medium shallot minced
  • 2 cloves garlic minced
  • 1 tablespoon parsley minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Trim the chicken livers and remove any sinew. Kitchen scissors work well for this.
  • Melt a tablespoon of butter in a skillet over medium heat. Add garlic and shallots. Cook for 1-2 minutes until fragrant.
  • Add chicken liver to the pan. Pan-fry the first side until golden brown, flip them over for the second side, about 5-7 minutes total. Add parsley in the last minute of cooking.
  • Remove from heat and cool enough to add to a food processor. Add remaining butter and season with salt. Puree until smooth.
  • Pour into ramekin dishes or a container and chill for 4 hours or overnight to set.

Keto Soy Sauce Alternative (Soy Free!)

Flavored with vinegar, ginger, and garlic, this low carb keto soy sauce substitution is packed with flavor so you can still eat soy sauce on a keto diet (or any diet) but without any negative effects of soy! This recipe is allergen-free and contains no sugar, soy, or wheat.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Serves: 16 tablespoons

Ingredients

  • 1.5 cups bone broth
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon maple extract or other liquid keto sweetener to taste
  • 1/8 teaspoon ginger powder
  • 1/16 teaspoon garlic powder
  • 1/16 teaspoon onion powder
  • 1/16 teaspoon salt

Instructions

  1. Add all ingredients, except salt, to a saucepan and bring to a simmer over medium heat.
  2. Maintain this for about 15 minutes, until the liquid has reduced by a third.
  3. Season with salt.
  4. Transfer to a bottle or jar with a tight-fitting lid. Store in the refrigerator for up to 1 week. Shake well before using.

Notes

Since this is bone broth based, you may see it gel after being in the fridge. Bring the homemade soy sauce to room temperature before serving and stir well to recombine the flavors.

Keto Ground Beef and Broccoli Stir Fry

Keto Ground Beef and Broccoli Stir Fry is a delicious quick and easy low carb dinner you can make in less than 30 minutes from start to finish, all in one single pan. 

Prep Time: 10 minutes

Ingredients

  • 2 tablespoons tallow or cooking fat of choice
  • 1 medium onion chopped
  • 1 clove garlic minced
  • ½ teaspoon ginger powder
  • ½ tablespoon Chinese 5 spice see notes
  • 1 ½ cups broccoli finely chopped 
  • 1 pound ground beef
  • ½ teaspoon salt
  • ¼ cup parsley chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Heat tallow or cooking fat of choice in a skillet over medium heat. Add the onion and garlic, sauté until soft and fragrant, about 5 minutes.
  2. Mix in the ginger and Chinese 5 spice powders. Continue cooking over medium heat.
  3. Add the broccoli. Stir occasionally and cook for 5-7 more minutes.
  4. Put the beef in the pan and break it apart with a spatula; mix in well. Season with salt.
  5. Once meat is browned, add fresh parsley. Give the whole mixture a few tosses and finish cooking until the meat is done to your liking.
  6. Garnish with sesame seeds and serve warm.

Notes

Chinese 5 Spice is made of anise seed powder, ground black pepper, fennel seed powder, cassia cinnamon powder. If you don’t have this in your spice rack, substitute with garam masala or a DIY blend.

Homemade Stevia Extract

Sweeten any dish with homemade stevia extract and keep the carbs and calories low. This is a simple way to preserve fresh or dry stevia leaf with a delicious flavor and no bitter aftertaste.

Cook Time: 30 minutes

Rest Time: 1 day

Total Time: 1 day 40 minutes

Equipment

  • Tincture bottle or small jar with lid
  • Cheesecloth, nut milk bag, or coffee filter

Ingredients

  • Stevia leaf fresh or dried
  • Vodka or Everclear

Instructions

  • With fresh leaf: Wash and remove fresh leaves from the stem. Pick through and remove any brown or wilted ones. Coarsely chop the fresh leaves into smaller pieces before placing them in a clean glass jar.
  • With dry leaf: Crumble the dry leaves into.a clean glass jar by rubbing them between your fingertips and thumb.
  • Cover contents completely with alcohol. Place the lid on and secure tightly.
  • Shake the jar and leave on the counter, out of direct sunlight, for 24-36 hours. Shake occasionally. DO NOT leave the extract to sit for longer than 36 hours.
  • Strain the leaves out through a fine mesh cheesecloth, nut milk bag, or coffee filter. Squeeze to remove all liquid.
  • Pour the extract into a small saucepan and very gently heat for 20-30 minutes, stirring often. DO NOT BOIL. Heat just enough so the alcohol evaporates off and liquid reduces in volume.
  • Let cool and store in the fridge in a small glass bottle, preferably with a tincture dropper.

Notes

The total yield of this recipe varies due to how many leaves you use. 1 cup of dry, crumbled leaf will fit in a pint sized glass jar and make about 1 ounce of liquid sweetener.

Ingredients

  • 2 pounds beef marrow bones
  • 2 pounds chuck roast cubed
  • 2 tbsp tallow or other cooking oil
  • 6 cups bone broth
  • 8 ounce mushrooms quartered
  • 2 cups cauliflower chopped
  • 1 large carrot chopped
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 tsp dried thyme
  • 2 tsp salt
  • 1 tsp ground black pepper

Instructions

  1. Turn the slow cooker on low and place the marrow bones in the center of the insert.
  2. Cube the roast. Heat tallow in a large skillet over high heat. Arrange the meat in a single layer and sear evenly on all sides. Cook in batches if needed. Once cooked, add to the pot.
  3. Rinse and chop all vegetables. Gather the herbs. Place everything all in the pot on top of the meat.
  4. Pour broth over it all. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours.

Notes

  • Use what you have on hand, this recipe is very forgiving! Do you have other vegetables in your fridge that need to get used up? Add them in. Chop the broccoli, zucchini, or cabbage and add to the pot. Parsley, oregano, or rosemary may also be added or substituted.
  • Mind your water line, if you add in a significant amount of extra vegetables, you may need to add more broth or water too.
  • Adapt this recipe for a carnivore diet by simplifying the ingredient list to marrow bones, stew meat, tallow, bone broth, and salt. Decrease the broth to 4 cups. Cook on low. Check after 6 hours.

  • Begin to preheat the oven to 350°F (175°C).
  • Warm butter in a frying pan over medium heat. Sauté the onion and garlic together for 5 minutes.
  • Remove the sausage from its casing and add to the pan also. Break apart into smaller pieces and brown all sides evenly. Cook around 8 minutes.
  • While the sausage browns, whisk 10 eggs in a large bowl. Stir in the cheese, thyme, salt, and pepper.
  • Transfer meat to an 8×8-inch (20×20 cm) glass baking or casserole dish. Arrange in a single, even layer on the bottom.
  • Pour the egg mixture over the meat. Gently jiggle or tap the dish so the egg can settle down around the meat.
  • Bake for 20 minutes, until eggs are set and top is golden brown. Let rest 5 minutes before slicing and serving warm.

Ingredients

  • 1.5 pounds ground beef
  • 1 tablespoon tallow, or cooking fat of choice, separated
  • 1 medium onion diced
  • 4 whole eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon ground mustard
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup shredded cheese

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9-inch round pie plate or 8×8-inch baking dish.
  • Lightly brown the meat in cooking fat over medium-high heat in a heavy-bottomed skillet or cast iron. Transfer to pie plate once cooked.
  • Add a little more fat to the skillet and brown the onions until translucent, about 5-7 minutes. Stir frequently.
  • While the onions cook, whisk the eggs. Add herbs, salt and pepper.
  • Pour over the beef so it sinks into the meat. Shake the dish gently if needed.
  • Arrange the onions in an even layer over the eggs and meat.
  • Top the whole pie with cheese.
  • Bake for 20 minutes, until cheese is melted and bubbly.
  • Allow the cheeseburger pie to rest for 5 minutes before slicing.

Notes

To make a complete hamburger themed meal, serve on a bed of lettuce with a side of pickles or Pickle Relish and thick slices of fresh tomatoes. Offer mustard and sugar-free ketchup at the table.
