Grilled Cheese

Makes 1 sandwich
Your favorite carnivore bread (Chicken buns or bacon weave crusts work best for this recipe)

2-4 ounces of your favorite gooey cheese or a combination of cheeses (cheddar, mozzarella, pepperjack, brie, etc.) *Please note, 4 ounces of cheese is a THICK amount of cheese!*

Making a carnivore grilled cheese is just as easy as making your “traditional” grilled cheese!

Heat your pan to medium-high heat. (Medium heat if you are using 4 ounces of cheese)

No butter should be needed! Especially if you’re using bacon weaves!

Heat the inside part of your “bread” for about 30-45 seconds.

Flip your bread over and layer your cheese and top with the other heated up piece of “bread”.

Grill your sandwich until the cheese starts getting melted. Carefully flip sandwich over to melt the other half of the cheese.

Remove from pan and enjoy!

Chicken Skin Chips

Chicken skin from 1-2 whole chickens or 1 pound chicken skins from your butcher, if you’re lucky like that

Salt or your favorite seasoning blend

Preheat oven to 325 degrees.

Season chicken skins with your seasoning of choice.

Place skins on a parchment lined sheet pan. They can be touching because they will shrink a lot during the cooking process. 

Bake for 20-22 mins. Flip skins over and bake another 20-22 mins. 

Let cool before eating.

If you want really flat chips, lay another parchment sheet over the skins and then lay another sheet pan on top of that parchment paper. Cooking times will vary for this method, so I suggest checking them 5 minutes sooner.

Meatza Pizza

Crust

2 ½ pounds Ground Meat (beef, chicken, turkey, bison, etc.)

2 eggs

1 tsp salt

2 tsp basil

½ tsp fennel seeds (optional, if you want a more Italian sausage flavor)

1 tsp garlic powder

½ tsp black pepper

 

Preheat oven to 400 degrees.

Mix all crust ingredients thoroughly and press into a large sheet pan or 2 pizza pans.

Make the crust a little thinner than you want because it will shrink and get a little thicker.

Bake for 12-15 minutes or until meat is cooked.

Drain fat from the pan.

 

Pizza topping ideas

8 ounces mozzarella

Parmesan

Goat cheese

Pepperoni

Cooked and crumbled sausage

Sliced cured meats

Cooked bacon

Poached eggs (top with poached eggs AFTER the meatza is complete or else you’ll have boiled eggs!)

 

Turn oven up to 450 degrees.

Top with your favorite cheeses and cured meats.

Bake 8 minutes.

Broil for 1-2 minutes if you want your cheese browned.

If you somehow don’t eat it all in one night, this makes phenomenal breakfast of the classic cold pizza!

Tamales

Tamale:

12 ounces cooked chicken, seasoned

1 whole egg

2 ounces tallow or fat of choice, melted

¼ tsp baking soda

 

Filling:

Use your own combination of sliced cheeses and already cooked meats. Ex: sliced steak, sliced chorizo sausage, chicken fajitas, etc.

Shredded cheese and crumbled meats do not work well with this recipe, they just make a big mess, but if you cook your ground beef into a patty that works a lot better.

 

Preheat oven to 375 degrees.

In your blender or food processor add chicken & baking soda and begin to blend with melted tallow.

Add in the egg while the blender is on.

Let your “dough” chill covered in the fridge until firm. (About 1-2 hours, or overnight)

 

Using a large piece of parchment paper, spread half of the batter in the middle in a rectangle shape about 1 inch thick.

Layer your slice of cheese and sliced meat in the center of the batter.

Using the parchment paper, carefully wrap the meat and cheese with the batter. Folding the parchment into the shape of your fillings. Fold in the last 2 flaps underneath the tamale to hold it closed.

Place on a sheet pan and bake for about 20 minutes. Let cool 3-5 minutes and unwrap the parchment paper.

Spicy Chicken Cheesy Muffins

4 ounces cooked chicken, shredded or diced small

4 whole eggs

2 ounces your favorite shredded cheese

¼ tsp baking soda

½ tsp salt

1 tsp garlic

1 tsp black pepper

1 tsp chili paste, hot sauce, or your favorite spicy condiment

 

Preheat oven to 350 degrees.
Combine all ingredients in a bowl with a spoon. Or if you want a less chunky muffin, mix in a food processor or in a stand mixer with the paddle attachment.

Divide batter into 8 lined cupcake cups.

Bake for 20-22 minutes or until center is set.

Breakfast Pizza

1 ½ pound ground sausage (more or less is okay)

8 ounces room temperature mascarpone or your favorite soft cheese (cream cheese, soft goat cheese, ricotta, etc.)

4 eggs

4 ounces shredded cheddar or your favorite cheese

1 tsp garlic

½ tsp black pepper

Butter for cooking

Preheat oven to 425 degrees.

Press sausage into a sheet pan and flatten out very thin. Make thinner than you would like because it will get thicker onced cooked.

Bake 12-15 minutes or until meat is cooked through.

While the crust is cooking, heat some butter in a pan and cook scrambled eggs and season with salt to taste.

Remove crust from oven and drain grease.

Turn broiler on.

Spread your soft cheese onto the crust to the edges.

Sprinkle garlic and pepper over soft cheese.

Spread your scrambled eggs over the soft cheese.

Cover pizza with shredded cheese.

Broil pizza 2-3 minutes or until cheese is melted/lightly browned.

This is also great cold if there are any leftovers!

You can also prep crusts ahead of time on parchment paper and freeze.
Once frozen, wrap in plastic wrap. That way you always have a meatza crust ready to go!
Frozen crusts take about 18 minutes to cook at the same temperature.

 

Cheesy Flatbread

6 ounces shredded cheddar

3 whole eggs

½ tsp garlic (optional)

⅛ tsp baking soda

 Preheat oven to 375 degrees.

Combine all ingredients and mix thoroughly. (Add 1 tsp garlic if you want garlic breadsticks!)

You can make into one large flatbread or 2 smaller ones.

For 2 smaller ones, spread half the batter onto a half sheet pan lined with parchment paper or a silicone liner.

Do not spread to the edges, let the layer be about ⅓-½ inch thick. It will spread.

Bake for 12 minutes. (12-15 minutes for larger size)

Let cool and cut in half or quarters and use as sandwich bread.
For breadsticks, slice into strips and grill in a buttered pan. 

Smooth and Creamy Cheesecake

12 ounces cream cheese, room temp

2 whole eggs, room temp

4 egg yolks, room temp

1 Tbs butter, room temp

1 tsp vanilla

½ tsp almond extract (optional)

½ tsp gelatin

Stevia to taste (optional)

Pinch of salt

 

Preheat oven to 300 degrees.

Ensure all ingredients are at room temp.

Combine all ingredients and whisk together with a stand mixer or a hand mixer. 

Place your 6 inch round pan into a larger metal round pan, 8 or 9 inch works.

If you do not have a silicone pan, you can use another 6 inch pan that is well greased or lined with parchment.

Pour ingredients into the 6 inch round silicone baking pan.

Pour boiling water into the outer pan to help the sides of the cheesecake prevent from burning.

Bake for 40 minutes.

Turn oven off and let continue cooking for 20 minutes. 

Chill cheesecake in fridge overnight or at least 6 hours to firm up before slicing.

Serve with whipped cream or with a sprinkle of cinnamon on top, if you’d like.

Cheesecake pictured is served upside down for that smooth look.

How To Make a Bacon Weave

Makes about 4 bacon weave “slices”

 

1 pack of your favorite bacon

 

Preheat oven to 375 degrees.

Cut pack of bacon in half.

Using the half slices, lay 3 slices down in a row.

Lift the bottom of the middle slice halfway up and lay a piece of bacon down underneath it in the opposite direction. Lay the middle slice of bacon back down.

Lift the top of the 2 outer pieces halfway up and lay another piece of bacon down underneath them in the opposite direction. Lay the outer pieces back down.

Repeat with the rest of the bacon. 

This should make 4 “slices” of bacon weave, but you may have to make a couple with only 4 pieces instead of 5, depending on how many slices are in your back of bacon.

Bake on a sheet pan for 20 minutes. 

Flip and cook for 5 more minutes. 

Remove from oven and let cool before using. Great for your favorite sandwiches!

You can also do this with the whole pack of bacon, without cutting it, so you can have a large bacon weave to wrap whatever your heart desires! You can wrap meatloaf, cheese stuffed chicken breast or even a tenderloin!

 

 

Meat Waffles

3 ounces cooked meat

3 whole eggs

⅛ tsp baking soda

Pinch of salt

 

Preheat your waffle iron.

Blend all ingredients until smooth in your blender. This will make a thick batter.

Spray ghee or spread some butter onto your waffle iron.

Pour just enough batter to spread it out to reach the edges of your waffle iron. If you overfill your waffle iron, you will have a huge mess and the batter will pour out the sides.

Let cook as you would a regular waffle.

Remove and enjoy with a huge slather of butter, or also tastes great with sausage and fried eggs.
